I absolutely love the Boneless Buffalo Chicken bites that you can usually find at all sorts of restaurants. But they are always breaded or battered in something flour based. Because I avoid processed flour and many processed carbs, I avoid having these when I eat out and I miss them. I know I could have the buffalo wings, but I really don’t like eating chicken off the bone, so I won’t eat those either. I’ve made buffalo chicken at home without breading and it’s delicious, but i was missing that crunchy-ness, and sometimes I’m looking for different ways to add more veggies into a meal and not more protein. This is the perfect recipe to give me both! It’s made with cauliflower and pork rinds and tastes so delicious. Give it a try and let me know what  you think!

Buffalo Cauliflower Bites


1 large head of cauliflower cut into bite-sized pieces
2-3 eggs
1 bag pork rinds
1/2 small bottle of Frank's Red Hot Sauce
2 Tbsp. butter
1 1/2 tsp black pepper


Preheat your oven to 350 degrees. Using a food processor or blender, process the full bag of pork rinds until they resemble fine bread crumbs.

Crack the eggs into a bowl and whisk with a fork until the yolks and whites are well incorporated. 

Pour the eggs over the cauliflower in a bowl. Cover with a lid and toss to coat. Add the pork rind crumbs and black pepper, and toss the cauliflower again to coat. (alternately you can dredge the cauliflower in the egg mix and then in the pork rind crumbs for more even coverage, if you like).
spread the cauliflower on a greased baking sheet and place in the oven for 15 minutes.

Pour half a bottle of Frank's red hot sauce into a sauce pan, and add the butter. Heat over medium low heat to melt the butter. Let it sit on low heat until you are ready to use.  

After the cauliflower is finished cooking, remove the baking sheet from the oven. Pour the Frank's red hot sauce over top of the cauliflower and toss them around with tongs. Turn the oven to broil, and place the cauliflower back in the oven for a minute or two. Watch them closely so they just brown, but don't burn. 

Remove them from the oven and serve with bleu cheese dressing or ranch if you prefer.
