Molten Chocolate Cake


1 egg, room temp

3 tbsp organic cacao or cocoa powder

1 tbsp heavy cream

2 tbsp coconut oil or butter, melted

1/2 tsp vanilla extract

2 tbsp Swerve confectioners sweetener

1/4 tsp baking powder

Pinch sea salt


Preheat oven to 350°F. Whisk ingredients together in a bowl. Coat 2 small ramekins with cooking spray. Pour batter inside. Bake for 20 minutes, or until set.

If you prefer a gooey center, undercook your cake so the center is giggly and the outside perimeter is firm (about 15 minutes in oven). Let cool for 5 minutes before inverting onto a plate.
