Oh for the love of Coffee!!

I’ve always been a coffee drinker, at least ever since I was 15 years old. Not many days have gone by since then that I haven’t had the warm, steaming cup of joe in my hands in the morning. And I always take mine with cream. I used to use a bit of sugar, and then I graduated to the flavored coffee creamers at the grocery stores. Plain ol’ Vanilla has always been my favorite. But those store-bought creamers don’t really go with a healthy low-carb lifestyle. Too many additives and tons of sugar. No thank you!

I’ve tried many times to recreate coffee creamer that lived up to my memory of that deliciousness I missed. And I’ve finally created a recipe that is thick, creamy, super vanilla-y and downright delicious in my coffee!

I’m even more excited to have my coffee in the morning now!

Yield: 2 cups

Keto Style Vanilla Coffee Creamer

Serving Size: 2 Tablespoons


2 cups heavy cream
1/2 cup powdered erythritol
2 vanilla beans - seeds scraped out and added to the mix


Combine all the ingredients in a sauce pan. 
Heat to boiling over medium heat, whisking continuously. Then reduce to simmer for 10-15 minutes.

Let cool and transfer to a glass mason jar or other glass jar. Store in the refrigerator for up to 2 weeks. The cream will thicken as it cools, so shake it before using each time.

Note: If you don't have vanilla beans, you can substitute 1-2 Tbsp vanilla bean paste. You can also change up the flavor by using flavored sugar-free extracts. I've used caramel, hazelnut, peppermint & chocolate, and they've all been delicious. You can find the flavor extracts I recommend here.
